5 pieces fresh corn, remove kernals
1 medium onion, medium diced
1 medium red pepper, medium diced
1 cup butter
1 Tbsp. parsley, chopped
Salt and pepper, to taste

In a medium sauté pan, melt butter on low heat before adding vegetables.  Cover pan and let cook for about 20 minutes.  Sprinkle parsley and season with salt and pepper, to taste.
