Ribs
Slab pork ribs
Onion
1/2 bell pepper
1 cup can pineapple juice
salt
pepper
Rinse ribs, salt and pepper right side up, turn over and pour on pineapple juice, salt and pepper to taste. Top with bell pepper and sliced onion. Bake in pre-heated over at 325 for 1 hour. Remove and top with favorite BBQ sauce. Then finish on Grill

Collard Greens
Fresh greens
Ham shank
Onion

Water
Simmer shanks until partially tender. Wash greens thoroughly. Trim stems from greens, roll handful of green leaves and cut crossways. Add to simmering shanks. Simmer on medium heat for 1 hour. Season to taste.
Sweet Potato Pie
3 hot sweet potatoes (mashed) (orange color or whitish)
1/2 lb. butter
1 cup dark brown sugar
3 eggs, beaten
cinnamon, ginger, cloves, nutmeg (to taste)
1 cup evaporated milk
2 T vanilla flavor (option: lemon, rum)
1/2 t salt
Mix all ingredients (orderly) to creamy texture. Pour into pie shells. Bake at 350 on bottom rack for 45 minutes or until golden brown.
