Local Boy Sandwich
Waffle Mix:
2 cups Bisquick
1 cup milk
1 egg
2 Tbs vegetable oil
1 tsp chopped fresh basil
Spray waffle iron with non-stick spray. Cook waffle until golden brown.
Sandwich Ingredients:
3 oz. bay shrimp
2 oz. baby lobster
Mix shrimp and lobster with Dill Aoli
1 tsp dijon mustard
2 leaves of green leaf lettuce
3 slices tomato
2 basil waffles
Fresh Dill Mayonnaise Aoli:
1 cup mayonnaise
1/4 cup rice vinegar
3 Tbs chopped fresh dill
Spread mustard on waffle. Place lettuce leaf, then tomatoes, then shrimp and lobster. Cover with second waffle. Cut into four and serve with pasta salad.

Cashew Chicken
Ingredients:
4 oz. sliced chicken breast
2 oz. cornstarch
4 oz. cooked cuka soba noodles
2 oz. Hoi Sin sauce
2 oz. oyster sauce
1/2 tsp chopped ginger
2 oz. sesame seed oil
1 cup stir fry vegetables 15 whole cashews
Method:
Cook cuka soba noodles and drain. Place on a plate and set aside. In a wok heat sesame oil. Dust chicken with cornstarch and saute for three (3) minutes or until cooked. Add Hoi Sin sauce and oyster sauce and vegetables. Saute for two (2) minutes and pour mixture over noodles. Top with cashews and serve.
