Dust with flour/cornstarch mixture. Deep fry until golden brown. DRESSING: 1 1/2 cup citrus juice (orange) 1/2 cup soy sauce 1/2 cup balsamic vinegar 1/2 Tbs. garlic 1 tsp. ginger 2 cups brown sugar pepper flakes to taste GARNISH: 1 apple flowers Marinate deep fried duck in dressing and toss lightly. Line the bottom of bowl with vegetables. Put duck on top of vegetables and garnish with apples and flowers.
4 Mahi Fillets lemon pepper seasoning 1/2 cup flour mixed greens wonton basket (optional) SALAD: 2 cups somen noodles 1 cup cucumbers 1 cup tomatoes VINAIGRETTE: 1 cup rice wine 1 Tbs. ginger 3 Tbs. sugar Pan fry the mahi mahi. Put mixed greens in wonton basket, place fish on top of the salad. Garnish with vegetable curls, tofu, black sesame seeds, cilantro and flowers.
