2 oz Mahi Mahi fillets salt and white pepper, to taste lemon pepper seasoning, to taste flour Sauce 1/2 cup mayonnaise 1 tsp garlic chili paste 1 Tbs tomato paste 2 Tbs ginger paste 2 tsp cilantro ,chopped Sweet bread slices island greens, tomatoes, ginger pesto and fried onions, for garnish Season fillets with salt, white pepper and lemon pepper. Dust with flour. Saute fish in a wok till done. Set on the side. Blend sauce ingredients together. Spread sauce over sweet bread slices. Layer fish on sweet bread. Garnish with island greens, tomatoes, ginger pesto and fried onions. Accompany with chips if desired.
4 oz scallops 6 oz ahi 4 oz shrimp 4 oz calamari, cleaned 1 tsp ginger, minced 1 tsp garlic, minced 3 tsp chopped cilantro 1 Tbs onion, chopped 2 Tbs paprika 1 tsp chili flakes 2 eggs 1/2 cup bread crumbs/panko lettuce and tomatoes, for garnish Combine the scallops, ahi, shrimp and calamari in a food processor. Season with salt and pepper. Place ingredients into a bowl. Shape the mixture into a patty and pan fry. Set on paper towels to drain. Place patty on a bun and garnish with lettuce and tomatoes. Accompany with chips if desired.
