Chicken & Mahi Mahi Lau Lau

2 Ti leaves
1/2 bunch of fresh spinach
1 chicken breast, skinned & deboned
Salt to taste
3 oz Mahi Mahi fillet
1/2 cup carrots & zucchini, julienne
1 oz sweet potato
1 oz Taro
1 oz Shiitake mushroom, julienne
2 slices of tomatoes

Place both Ti leaves on plate crossways. Layer ingredients: spinach leaves,
chicken breast, salt to taste, Mahi Mahi fillet, salt to taste,
carrot & zucchini mixture, sweet potatoes, Taro, Shiitake mushrooms
and top with the slices of tomatoes. Tie Ti leaves at top to form a Lau Lau.
Steam Lau Lau for 30 to 45 minutes.
Serves with rice or poi.

Island Fruits With Cottage Cheese Honey Lime Dip

1 qt cottage cheese
1 tsp lime juice
1/4 cup honey
1 cup orange juice
1/2 cup blackberries
1/2 cup blueberries
1/2 cup raspberries

Combine ingredients and carefully mix together. If you'd like to make a
dressing, just blend ingredients in blender to desired texture.
Serve with a plate of fresh island fruits.
