MANGO MOON MANGO BREAD

  • 2 c Flour

  • 1 1/2 c Sugar

  • 2 t Baking Soda

  • 1 t Ground Cinnamon

  • 4 Eggs

  • 1/4 c Vegetable Oil

  • 2 c Mango, cubed

  • 1/2 c Macadamia Nuts, chopped

    Combline all ingredients in a bowl and mix well.  Place mixture in a pre-greased bread pan and place in a pre-heated 350 degree oven for 45 minutes to an hour.

MACADAMIA NUT CRUSTED MAHIMAHI SALAD

  • 2 ea Mahimahi Filets

  • 1 c Panko

  • 1/2 c Macadamia Nuts, chopped

  • Salad Greens

  • Vinaigrette Dressing:

  • 1 c Papaya, cubes

  • 1 c Pineapple, cubes

  • 1/2 c Onion, diced

  • 2 T Sugar

  • 1/2 c Rice Wine Vinegar

  • Salt & Pepper to taste

  • 1/4 c Salad Oil

    Mix panko and chopped macadamia nuts in a bowl.  Coat mahimahi filets and fry to desired texture.  Set aside.  In a blender, add papaya, pineapple, onion, sugar, rice wine vinegar and mix well.  Slowly add salad oil to mixture as it continues to blend.  Add salt and pepper to taste.  Over salad greens top with mahimahi filets and drizzle with dressing.  Garnish with more papaya and pineapple cubes.
