Lemon Grass Lamb Chop On Sauteed Choi Sum

DRY RUB FOR EACH LAMB CHOP
1 t    Lemongrass, finely chopped
1 t    soy sauce
1/2 t    Cinnamon
1 t    Paprika
1 t    Garlic, minced
Salt to taste
Mix ingredients to create "dry rub" for each lamb chop.  Marinate lamb chop overnight.  Pan fry to desired taste, preferably not more then to medium done.
 
SAUTEED CHOI SUM

1/2 lb    Choi Sum
2 oz    Chicken Stock
1 t    Lemongrass, finely chopped
Salt & Pepper to taste.
In a saute pan heat oil, add choi sum and stir fry for a couple of minutes.  Add lemongrass, and salt and pepper to taste.  Add chicken stock and cook till choi sum is still slightly crunchy.

Crispy Braised Shoyu Duck

5 lb    Duck
2 c    shoyu
2 c    Brown Sugar
2 T    Green Onions, diced
2 c    Water
2 T    Five Spice
2 T    Ginger, grated
1 T    Garlic, minced
Add all ingredients together to make marinate.  Put marinate in a stock pot and marinate duck for one hour.  Then simmer for 2.5 hours or till the duck is tender.  Let cool.  When cool, crisp up the skin by putting the duck under the broiler for 5 minutes.
