LUAU BAKED OYSTER

Ingredients

  • Pacific Oysters
  • 3 c Yellow Onions
  • 3 c coconut milk
  • 1 qt Heavy Cream
  • 2/3 c Sugar
  • 1 t Salt
  • ½ t White Pepper
  • 2 T Butter
  • 1 Whole Egg
  • 1c Luau Leaves, blanched

To prepare Luau Sauce, sweat onions with butter, add heavy cream and coconut milk stirring for 1 minute and simmer. Add sugar, salt, white pepper and butter. Mix until blended. Bring to a boil. Thicken with cornstarch mix until nappe. Whisk in 1 egg to 1 ½ c of sauce, add cooked luau leaves and mix thoroughly. Coat over oyster and bake until golden brown.

Baked Portuguese Sausage Crusted Oyster

  • Pacific Oysters
  • 1 lb Portuguese sausage, small diced
  • 3 oz Celery, diced
  • 3 oz Green Pepper, diced
  • 3 oz Yellow Onion, diced
  • 1 oz Green Onion, diced
  • ½ T Garlic, minced
  • 2 oz Parmesan Cheese, shredded
  • 2 Whole Eggs
  • 1 T Spice Mix
  • 1 oz Salad Oil
  • ¾ T Salt
  • 1 ½ oz Panko

Prepare Portuguese sausage Crust by heating salad oil, adding Portuguese sausage and render at medium heat for 5 minutes. Sauté trinity of vegetables until tender, then add garlic, spice mix and green onions. Season with salt. Turn of fire and fold Parmesan cheese and chill. When cool, fold in the eggs and panko. Reseason oyster with some spice mix and place prepared Portuguese crust on top and bake in a 350 degree oven for about 4 minutes.

Pulehu Oysters

Ingredients

  • Pacific Oysters
  • 1 t shoyu
  • 1 t Hawaiian chili pepper water

Grill oysters on the barbie or stove and drizzle over with shoyu and chili pepper water. Serve.

Cornmeal Oyster With Cucumber Namasu Tartar

Ingredients

  • Pacific Oysters
  • 1 oz Cornmeal
  • 1 T Spice Mix
  • Cucumber Namasu Tartar Sauce:
  • 8 oz Cucumber Namasu Mix
  • ¼ c Namasu Marinade
  • 2 c Mayonnaise
  • 1 oz Capers

In a bowl, add cornmeal and spice mix and mix well. Then dredge oyster meat in cornmeal mixture. Follow up by dropping oyster meat in a deep fryer at 325 degrees for 1 minute. Remove and re-season with spice mix. To prepare Namasu Sauce, blend the Namasu mix with the liquid marinade until minced. Combine it with mayo and capers mixing together well. Place cornmeal fried oyster back in shell, and add a dollop of Cucumber Namasu Tartar Sauce.

Miso Glazed Kahuku Prawns

  • 6 ea Hawaii Farm Fresh Prawns
  • 1 Whole Egg
  • 3 T Miso
  • 1 pinch Cilantro
  • ¼ t Garlic, minced
  • 1 T + 1/8 t Sugar
  • 8 oz Salad Oil
  • Salt & Pepper
  • Juice from 1 Lemon

Previously blanch prawns for about a minute first off and then slit in the middle to butterfly them. Remove waste/coral from the head of the prawn. Season meat with salt and pepper. In a blender, puree egg, miso, cilantro, garlic, sugar and salad oil. Lay prawns on a baking tray and squeeze lemon juice on top. Drizzle miso puree mix above meat and broil at 350 degrees for about 5 minutes or until surface is golden brown.
