Crabmeat Potato Croquettes (Korokke)

2 lbs Potatoes
4 Cloves of Garlic
1/4 lb Butter
3 oz Cream
1/2 med Yellow Onion, minced
1 Egg, beaten (to mix with the potato)
1 T Oil
Dungeness Crabmeat
Salt and Pepper to taste
2 c Panko
1/2 c   Flour
1 Egg, beaten (to coat korokke)
Canola Oil for deep frying

Boil or microwave the unpeeled potatoes. Place the oil in a frying pan and add the onion. Sauté until the onion is tender. Add salt and pepper and sauté about 3 minutes until crumbled. Set the mix aside while you peel and mash the potatoes. Mix potatoes with garlic, butter and cream. Thoroughly mix the potatoes and the onion mix in a large bowl with green onions and crabmeat. Divide the potato mixture into eight parts and shape each portion into a 1/2 inch thick ellipse. Dredge each portion in the flour and pat off the excess flour. Dip them into the egg wash and then into the panko. Deep fry them at 350 degrees for about 3 minutes on each side until lightly browned.

Miso Simmered Pork And Vegetables

1 lb Pork Shoulder Roast, cut like stew meat or 1 1/2 lb country style spareribs
2 med Carrots
2 med or 1 large turnip
Handful of Green Vegetables (snow peas, string beans or green onions)
1 Block Tofu

Cooking Liquid:
3 c Water
2 T Sugar
2-3 T White Miso
1-2T soy sauce
1 T Toasted White Sesame Seeds, ground
2-3 slices of Ginger

Cut carrots 2 1/2 inches long and quarter them. Peel and quarter turnips. Cut tofu into 2 1/2 x 1/2 inch squares and set aside. Blanch pork in boiling water and drain.

Heat 1 tablespoon of oil in a heavy frying pan and brown the surface of the pork. Place the pork and carrots in a pot. The turnips should be added 30 minutes later because they cook faster. Cover with the water and add 2/3 of the seasonings and ginger slices and bring to a boil. Remove any scum. Lower the heat and cover. Simmer for 1 to 1 1/2 hours until the meat is very tender and most of the liquid has evaporated. Add more hot water and seasonings if necessary. Parboil snow peas or string beans in salted boiling water. Rinse with cold water and drain.

Arrange in individual bowls and add green beans or snow peas, shredded ginger or lemon rind, tofu and serve.
