Deep Fried Tofu Balls

Ingredients
1 block Aloha Firm tofu, well drained
2/ 3 lb. ground pork
4 pieces shiitake mushrooms, soaked in water and then finely chopped
1 medium onion, finely chopped
Oil for frying

Seasoning
1 Tbsp. shoyu
1 Tbsp. sake
1 Tbsp. sesame oil
2 Tbsp. sugar
1 tsp. salt
1 Tbsp. juice from ginger
2 Tbsp. cornstarch

In a large mixing bowl, add all ingredients together. Knead well until all ingredients have been incorporated together. Heat oil in wok until hot. With a spoon, scoop out a portion of mixture and drop into hot oil. Fry until golden brown. Can be served hot or cold.

Takikomi Gohan

Made with completed Okara recipe
3 C rice, washed and soaked for about 1 hour
1 C stock from cooked okara ingredients
2 C water
1 tsp. Hawaiian salt

Add all ingredients into rice pot and mix well cook rice.

Okara

Ingredients
1lb Okara (soybean meal)
2 pieces triangle Aloha brand Aburaage, finely sliced, boiled for 20 seconds and drained
1 piece Aloha brand Konnyaku, finely sliced, boiled for 20 seconds, and drained
1 medium onion, finely chopped
1 medium carrot, julienne
4-5 pieces dried shiitake mushrooms, soaked in water
5 pieces araimo, peeled and diced, then soaked in water
1/ 2 block kamaboko, finely chopped
1 bunch green onions, finely chopped

Seasoning
1 C water left over from soaking shiitake mushrooms
2 C water
1/ 2 C sake
1/ 2 C Mirin
5 Tablespoons sugar
3 Tablespoons shoyu
1 1/ 2 teaspoons Hawaiian salt
1/ 2 Tablespoons dashi no moto

In a large frying pan, add 1 Tbsp. vegetable oil. Heat oil and add onions. Fry onions for about 1 minute. Add each ingredient except okara and green onions one at a time continuing to fry ingredients for about 2 minutes. Add seasonings one at a time stirring ingredients. Cover fry pan bring heat down to medium low and simmer for about 20 minutes. Set aside.

In large stew pot, add 2 Tbsp. vegetable oil and heat. Add okara and fry until it is evenly heated and then add cooked ingredients, mixing until other ingredients are incorporated, simmer for about 20 minutes. Add green onions and combine with other ingredients. Remove form heat and serve.
