Berry Fresca and a Pina Vojito

Berry Fresca

1.5 oz Ciroc Red Berry
.75 oz Fresh Lemon juice
.5 oz Simple Syrup
5-6 Mixed Berries (Strawberries, Raspberries, Blueberries)
Ginger Beer

Method: Muddle berries with lemon and simple.  Add vodka and ice, shake and strain over ice into a highball.  Top with Ginger Beer
Garnish: Berries used in the cocktail

Pina Vojito

2 oz Ciroc Coconut
.75 oz Fresh Lime Juice
.5 oz Simple Syrup
2 Pineapple Spears
Handful Fresh Mint

Method: Muddle pineapple and mint with lime juice and simple.  Add vodka and ice, shake and roll to evenly distribute contents.  Pour into highball.
Garnish: Thin pineapple half moon with skin left on

Kalbi Tacos and a Shrimp Pasta Salad

Lightly grill corn or flour tortillas and lay down Kalbi Strips, add Korean Cole Slaw and top with Mango Salsa, Monterey Jack Cheese and or sour cream.

Kalbi Sauce
1 C Shoyu
2 C Sugar
1/2 C Honey
1 C Water
1/2 C grated round onion
1/2 c chopped green onion
1 T minced fresh chili pepper
1 T coarsed ground pepper
2 T Sesame Oil
2 T Toasted Sesame Seeds
1/4 C Veg Oil
Soak 3 lb. of 1/2 inch short ribs in plastic ziploc bag for 3-4 days to allow the marinade to penetrate fully. Grill over medium heat and slice thin. Set aside.

Mango Salsa
1 C Diced Mango
1 C Diced Tomato
1/4 c Diced Round Onion
1/8 c Minced Cilantro
1/8 c Fresh Lime Juice
2 T grated ginger
2 T minced fresh chili pepper
1 t kosher salt
1 t fresh black pepper
2 t cumin

Korean Cole Slaw
Mesclun Greens, Julienne Carrot, Bean Sprout, Won Bok tossed with Korean Aioli

Korean Chili Aioli  (Koo choo jung Aioli)
1 T Chili Paste
2 T Minced Cilantro
1 T Sesame Oil
1 T Vinegar
2 T Shoyu
2 T Sugar
1 T Minced Garlic
1 C Mayonaise
salt and black pepper to taste

Shrimp Pasta Salad
Combine warmed grilled shrimps, vegetables, grilled vegetables, Balsamic Vinegrette, Mango and add feta cheese, salt and pepper to taste.

1 C each diced Zucchini, Yellow Squash, Red bell pepper, yellow bell pepper, button mushrooms, and red onion. Add 1/4 c veg oil and 2 T minced garlic and grill on slotted pan.
Grill 2 lbs of shrimp Add 1/4 c veg oil and 2 T minced garlic and grill and set aside.
Add
1 C diced cucumber
1 C diced tomato
1 C diced mango
1/4 C minced cilantro
2 t lime or lemon zest
1/2 C feta cheese
1 C cooked farfalle pasta (bowtie)

Balsamic Vinaigrette
1/2 C Balsamic Vinegar
1/4 C Brown Sugar
1/2 C Extra Virgin Olive Oil
2 T Minced Ginger
2 T Minced Garlic
1 T Cajun Seasonings
2 T Minced Sweet Basil
1 T Dijon Mustard
