Spicy Poke Salad

¾ - 1 lb.  Fresh local Ahi fillet diced in poke size pieces
2 tbsp.  Mayonnaise
1 tsp. Sriracha hot chili sauce
½ tsp.  Hawaiian rock salt
½  locally grown avocado diced  
1 tsp. capers

Mix mayonnaise and Sriracha hot sauce.  Add in Ahi, salt and capers.  Add avocados and mix.  Place of fresh local vegetable salad.

Poke Tempura

Poke Tempura

Use ½ - ¾  pound poke of your favorite flavor
1 tub Surimi (raw fish paste sold on the Island of Hawaii)
1 local egg

Option:  diced water chestnuts.

Mix surimi and poke.  Add 1 egg.  Mix and set aside in refrigerator for 5 minutes.  
Form into two inch balls and flatten into patties while frying in oil.

Portuguese Sausage Hamburger

Portuguese Sausage Hamburger

1 lb. local grass fed ground beef
1 10oz package Mountain Apple Brand Portuguese Sausage
½ cup sliced Maui round onions
1 local egg

Remove Portuguese sausage from casing and chop into smaller pieces.  Mix with 1 pound hamburger, ½ cup sliced onions, and 1 egg.  Form into patties and fry with oil.
